Strong water-retention capability, thermally irreversible, and resistant to high-temperature sterilization.

Product Introduction: MDM is primarily made from sodium alginate, combined with other ingredients like calcium salts, to create a heat-reversible gel. It’s safe and healthy for consumption, offering excellent water and oil retention properties.

Recommended dosage: 0.5%–3% (add as needed, adjusting to your requirements)

Application scope: particles, emulsified meat products

Product Features: features a thermally irreversible gel that effectively retains both water and oil, delivering excellent emulsification performance. when combined with fat (chicken mince) and ice water, the emulsion ratio can reach 1:5:20–25. The resulting gel creates a dense texture, offering a firm, crisp, and resilient mouthfeel with exceptional stability—capable of withstanding high-temperature sterilization up to 115°C.
